This is my new Breakfast Obsession since I got back from Bali!! Packed with protein, incredible amounts of fiber, omega 3’s,antioxidants, potassium, magnesium and calcium, these superfood seeds boost your energy like nothing else, improve your endurance and are fantastic for your digestion, especially if you have a sluggish colon! Not only that, so they are delicious, not just for breakfast but for desert too. Make them with your favorite toppings…here is my favorite one so far!
SHARON’S VANILA COCOA COCONUT CHIA SEED BREAKFAST PUDDING RECIPE
You will need a 16 oz Mason Jar or any kind of glass jar with a lid.
1/2 cup chia seeds
1 cup almond milk (see my recipe to make your own at home) or purchase from the store.
1 Tablespoon Honey or Maple Syrup
2 tablespoons Raw Cacao Nibs
1 Teaspoon Pure Vanilla (do not use Vanilla flavoring)
1/4 Teaspoon Cinnamon
2 Tablespoons Shredded Coconut (you can make your own or buy in the store)
Toppings: Sliced Banana, Diced Papaya, Blueberries, Goji Berries, Dried Mulberries, Sliced Almonds, Walnuts or Pumpkin Seeds!
Fill a 16oz Mason Jar (I got mine at Fontana)with 1/2 cup chia seeds.
Add 1 cup of Almond Milk, Honey or Maple Syrup and Cinnamon. Stir everything together and store covered in your fridge overnight or for at least 2 hours so Chia Seeds can soak.
Stir well before serving and add a little water or coconut water if too thick.
Top with Raw Cacao Nibs (I got mine at Natural Health), Shredded Coconut and your Fruit and Nuts of choice!
Stir everything together and sit and enjoy!
The Pudding can last 4-5 days in the fridge and is great for breakfast or for a sweet dessertz treat!
