Matcha Mint Tea Latte

Matcha tea is made from handpicked chlorophyll-rich tea leaves that are ground into a fine green powder. One cup of matcha green tea has as many antioxidants as ten cups of regular tea! It’s known to boost metabolism, increase energy, and fortify your immune system.

YIELD: 2 (1-cup) servings        PREP TIME: 10 minutes

Ingredients

1 cup fresh mint leaves, plus a sprig for garnish
2 cups water
2 teaspoons matcha tea powder (try my favorite here)
2 teaspoons honey
¼ cup Homemade Vanilla Almond Milk or Homemade Coconut Milk (page 158 & 159 of my Live Fit Kitchen Cookbook) or storebought unsweetened almond or coconut milk (optional)

Procedure

1. Place the mint leaves in a small saucepan, cover with the water, and bring to a boil. Strain out the mint leaves and let cool.
2. Transfer the mint tea to a high-speed blender. Add the matcha powder, honey, and almond milk to the mint tea and blend until combined.
3. Serve warm or iced. Decorate with a sprig of mint and enjoy!
